Pork + apple kofta with tzatziki


Ooooh, an excellent dirty kebab, who doesn't love one of those?! I mean, now and again its ok but at home, these are a great healthy alternative. You won't feel you are missing out I promise! 

Serves 4 

Kofta, 
8 x kebab sticks, soaked in water 
500g pork mince (10% fat is ideal)
1 x eating apple diced as thin as you can 
2 x spring onion thinly sliced 
5 x sprigs fresh lemon thyme 
1 x tsp dried mint 
2 x garlic cloves grated 
1 x red chilli, seeds removed and finely diced 
1 x egg 
2 x tbsp breadcrumbs 
S + P 

Tzatziki, 
4 x tbsp Greek yoghurt 
1/2 cucumber, grated 
1/2 tbsp dried mint  
1 garlic clove grated 
S + P to taste 

Mix the minced pork, apple, spring onion, chilli, garlic, mint and thyme and a large pinch of salt in a bowl. Add the egg to the mix followed by the breadcrumbs (you can judge this as you go, it should hold well together). Divide the mixture into eight portions and roll each one into a sausage shape. Push the skewer through the middle of each and place in the fridge for at least 20 mins to firm up. 

While the kofta are chilling you can crack on with the tzatziki, pop all the ingredients into a bowl and mix, the dried mint is an excellent seasoning, but it may need a little extra salt + good grind of black pepper. 

Heat a griddle pan or frying pan, brush each kofta with olive oil and a bit extra in the pan. Fry on each side for 4 minutes. Remove from the pan and let them rest for a few minutes. 

I served these with roasted peppers + sweet potato, but can be served with absolutely anything and are really filling.
